You can see the quality you get doing that from my photos above. It will take photos in 1080 video mode but they are at 1080 resolution, same as the video and last I looked the video frames were actually better quality than the photos so it is better to just grab one of the video frames and save that as a photo. I don't know about the remote control options other than that it has auto start/stop for video on power on/off, so I'll let someone else answer that.
